There is more pork consumed in the world than any other meat, yet there is still intense competition in the pork industry world-wide to attract and retain consumers. Pork quality is a major factor influencing the final decision of consumers on what to purchase. The industry must therefore do all it can to identify those factors that influence pork quality, and where possible make changes pre- and post-slaughter to address these issues while allowing each sector to make a reasonable profit.
